Characteristics:
Erythrosine (B), is a kind of red or reddish brown particles or powder, odorless, soluble in water, soluble in ethanol, propylene glycol and glycerol, not soluble in oil. It has good staining properties, especially for protein staining. Compared with other synthetic red pigments of the same type, its heat resistance, alkali resistance, oxidation and reduction resistance and coloring power are better.
Application:
Erythrosine can be widely used in fermented food, baked food, ice cream, fish cakes, pickled products and other non-acidic food.
